Sunshine on a Cloudy Day

It’s been cloudy and rainy this weekend in Kentucky…honestly it reminds me of the set of Twilight. In addition to binging on cookies & comfort food I figured I’d make a salad bursting with color to brighten my mood.

To be completely honest, I’m a little more sensitive to the weather than I’d like. Cold, rainy days with cloud-blanketed skies don’t exactly make me want to roll out of bed in the morning. So, I do what I can to add a little color back into the day.

Sprouts & Greens | Colorful Spring Salad

A fresh spring salad bursting with color! Featuring rainbow radish, cucumber, dragon fruit, and cute lil sprouts.

i n g r e d i e n t s

  • 1 handful arugula
  • 1/4 c. sunflower sprouts
  • 1/4 c. alfalfa sprouts
  • 1/3 rainbow radish
  • 2 spears white asparagus
  • 4 slices cucumber
  • 1/2 yellow dragon fruit
  • oil & red wine vinegar

m e t h o d

  1. Rinse greens, spin dry. Or buy pre-rinsed.
  2. Measure out and add ingridients.
  3. Toss and dress with oil & red wine vinegar to your liking (:
