Pusheen Pop-up Café

Hey guys! I’m really digging the warm spring tones, the little rabbit cut-outs and the flowers for spring. These pancakes are my take on healthy pancakes for International Pancake Day! Can that be a thing like once a month?! I might make that a thing, because this was SO FUN to make.

The look was loosely inspired by the Pusheen pop-up café in Singapore, which is the first and only of it’s kind in the world. Kumoya Singapore is ending the pop-up on April 14th, and I really would fly all the way over there to eat at the café before it’s gone forever. (╯︵╰,)

You might know Pusheen as the adorable, quirky grey kitten on FB Messanger stickers.


Specifically, this is where I got super psyched about recreating this look in pancake form <3

i n g r e d i e n t s

  • 2 tbsp dragonfruit powder
  • 1 c Greek yogurt
  • 4 pre-made pancakes
  • handful blackberries
  • 1 banana
  • 1/2 papaya
  • handful freeze-dried strawberries
  • 1/2 apple
  • 1/2 c granola
  • maple syrup

m e t h o d

  1. You can find pre-made pancakes in the freezer section of your grocery store, just pop them in the microwave for ~2 min
  2. Mix dragonfruit powder and yogurt together to make it pink.
  3. Top with fruit and syrup (:
